Coupled with an aromatic sprinkling of crispy silver needle ‘loh shu fun’ noodles, refreshing pomelo, zesty lime and home-made plum sauce.
Steamed Red Garoupa: The best culinary method to showcase the freshness of a fish worth its salt. Chef James uses savoury yellow bean paste to complement the sweet firm bite of a red garoupa, culminating in intense tenderness and sweetness with a subtle savouriness. Braised Baby Abalone with Chinese Spinach: A sight to behold; little pyramids tiered with multi-delicacies such as plump abalones and juicy mushrooms with tender sea cucumber that are braised in premium oyster sauce.
