These signatures can be optionally paired with 3 select labels of Cattier Champagne that are produced by this boutique, family-owned champagne house that runs for 13 generations since 1625 in Chigny Les Roses, a Premier Cru village of Montagne de Reims, part of Champagne, France.
Your festive evening begins with plump, hand-dive Hokkaido Scallop in decadent, flavoursome Vichyssoise, enhanced with a sprinkling of savoury Avruga caviar and crunchy Parmesan crouton. Pair it with Brut Icône, an expressive bubble with aromas of apricots, peach and ripe pear on the nose, with a refreshing, fruity and redcurrant finish.
Proceed to the highly prized, luxurious Maine lobster done 2 styles. The Lobster Thermidor features half a lobster that is lightly poached to retain its sprightly succulence, with generous spread of creamy cheese sauce. Its claw is butter-basted with a nutty hint for an added dimension. Pair this with an elegant Dry Rosé with notes of red fruit cocktails on the nose, smooth round aromas of jelly fruits, apricot and rose in the mouth and a zesty citrus finish.
For mains, choose between tender, flaky Black Cod in tangy tomato base, served with beans flavoured in smoky chorizo, or a non-seafood signature that brims with intense umami flavour profile – a wonderfully braised Beef Tenderloin in Red Wine Sauce and king oyster mushroom. We recommend Brut Premier Cru, a strong and expressive bubble in its own class, where all its grapes hail from premier cru villages. The nose is pleasant with dried floral aromas, plum and biscuit notes, whilst the mouth is smooth with hints of dried fruits, orange and cinnamon.
Round off your festive evening with Porta’s version of a deconstructed Christmas cake. The Dry Rose that brims with notes of super fresh cold berries with a citrus finish is a perfect accompaniment to the dessert’s triple flavours of chocolate, vanilla and cream cheese.
