Singapore’s first dedicated carvery serving premium meats

The Carvery is the hotel’s stalwart restaurant renowned for its indulgent meat buffet offering a comprehensive selection of flawlessly-prepared, quality roasts.

Once through the doors of The Carvery, the first eye catching element is the expansive three-metre long meat carving station spotlighting an impressive and comprehensive display of three to four top-quality cuts of beef, lamb, pork and chicken. An experienced carver is always on the ready to serve up customers’ preferred cuts. Just behind the carving station is a range of top-of-the-line roasting ovens and rotisserie where the meats are carefully prepared daily for diners.

For a complete carvery experience, guests can pair their meat selection with a variety of condiments and sauces created specifically for The Carvery collection. These include a range of specialty fine salts, house-made butters (available during dinner) and a myriad of sauces. In addition, there is also a delectable line up of side dishes which perfectly accompany the assortment of meats.

Escape the holiday stress and immerse yourself in the festive atmosphere amidst tropical verdant gardens and botanical tranquility at The Carvery! “A Rustic Merry Christmas”, our theme for the festive buffet spread, is inspired by the traditional flavours of the holiday and promises many nostalgia-evoking dishes, comfort foods and culinary surprises. Celebrate the season with your family and friends with a dazzling array of tantalising roasts, chilled seafood, must-have yuletide sweets and handmade wood-fired pizzas at The Carvery. Starting from S$51++ for lunch and $61++ for dinner, the marquee highlights of the eclectic menu includes 21-day Gin-aged Angus Beef Prime Ribs, Spit-Roasted Chicken with Sweet Orange and Aged Balsamic Glaze, Sticky Date Trifle, and the rum-laced Almond and Rhubarb Pithivier. Absolutely divine! Sidle up to the carving station and enjoy the restaurant’s best roasts and meat items, including Honey Glazed Ham, Traditional Roasted Turkey with Stuffing, and Pork Porchetta with Apple and Fennel Stuffing. For a complete carvery experience, pair the meat selections with freshly baked Yorkshire Pudding, and a variety of homemade specialty condiments and sauces, such as truffle-, anchovy- and red wine butters. From the hearth of our wood-fired oven, we've also included new pizzas for the season, Pulled Pork with Pickled Mustard Seed, and Baby Spinach with Wild Mushrooms and Truffle Oil. Finally, cap off the yuletide feast with a spellbinding variety of holiday-themed desserts, such as Christmas Log Cakes, and Eggnog Creme Brulee! Chefs will also be on deck to make crepes at the live station — top the crepes off with sauces and condiments like caramelised banana, maple butter, whipped cream, chocolate hazelnut, various fruit compotes and more. Festive Takeaway Orders
Back by popular demand, The Carvery will once again offer its lauded roast chicken for pre-orders, perfect for the home party, office celebration for the Christmas potluck! This year's rendition of our signature roast matches the citrus flavours of oranges with the sweet- savoury tang of aged balsamic vinegar. The Carvery’s time-tested recipe calls for every chook to be brined for at least 24-hours in a special bath of aromatics, before it is thoroughly seasoned and sent to the roasting oven. Our chefs then lovingly baste the chicken with layers upon layers of orange and balsamic glaze, until the whole bird is roasted to a perfect golden brown, intensely flavoured on the outside, and tender and juicy on the inside! A showstopper for any merry-making gathering, each roast chicken weighs approximately 1.8kg and is ideal for four to six guests. This is The Carvery after all, a restaurant that has built its reputation on the quality of the premium roasts it serves daily. Executive Chef Ian Hioe has chosen to showcase Rosedale Ruby beef for the weekend  menu, an Angus Charolais breed that has been raised on both pasture and grain, producing sweet and marvelously marbled beef perfect for the roast.   If that is not enough to fill your plate, graze on the new high tea items, such as pulled pork or skirt steak sandwiches, the ever popular Croque Monsieur, Angry Wings and the enticing Truffled Mac & Cheese.
