The Carvery’s time-tested recipe calls for every chook to be brined for at least 24-hours in a special bath of aromatics that include white peppercorn, bay leaves and thyme, which help to impart a lovely subtle hint of flavouras the brine works its magic to keep the meat plump and juicy. Staying true to the festive ‘Forest Feast’ theme, our chefs then slather the chicken with the star ingredient for this year's Christmas Roast - house-made truffle butter. Our chefs slather the chicken generously with the earthy goodness of the truffle butter, making sure that every inch of the bird is evenly coated both inside and out, before popping it into the rotisserie, which basts the chicken in its own drippings as it turns, resulting in a perfectly tender, succulent roast worthy of Christmas time memories.
A showstopper for any merry-making gathering, each roast chicken weighs approximately 1.8kg and is ideal for four to six guests. Every order comes with roasted seasonal vegetables and rustic herbed potatoes, at $48 nett. Customers have the option to include an additional bottle of house wine for $30.
