In Valentine’s week from 8 to 16 February 2020, Tablescape offers a dining experience for two that will have you both re-live the heart-thumping, rose-coloured days of new love.
The dinner begins with the amative Oysters – but chef Armando adds even more complexity to its silky briny slip by gently smoking the bivalves and layering it with a cucumber tartare and a granita made with Singapore Sling.
The second course uses aromatic cacao nibs to bridge the succulence of Foie Gras with the fruitiness of plums: a culinary haiku to love with its delicate balancing of the sweet with a whisper of bitter.
The menu then presents an original recipe from chef Armando – the ‘Risotto’ Without Rice. Specifically using a type of pasta called riso disemola that is rare even in Italy, the pasta dish can easily be mistaken for risotto thanks to the rice grain shape of the pasta.
The choice of main course builds on the idea of comfort and satisfaction: confit black Cod with purple potato chips, and an anchovy- Amalfi lemon sauce or a generous serving of Beef tenderloin with white, gold and red baby beetroots and a truffle jus.
Dessert is both playful and dramatic. The Italian classic Tiramisu is deconstructed and presented in its separate elements –
mascarpone mousse, ladyfinger biscuits and a coffee-Bailey’s syrup.
