Consider the choice of the Duck starter and the Risotto main course. Both deliberately offer an element with aromatic smokiness: the smoked duck breast in the starter and the smoked beetroot in the risotto. They were inspired by the idea of a crackling Christmas fireplace where only the most fragrant wood is burnt; though Singapore might be a little too warm for a fireplace, the scent association and feeling of comfort can be brought to life on the palate.
The emblematic flavour of winter apples are most noticeably as a texture- and scent-rich Apple dessert option. Crispy tart shell contrasts with apple cooked into a tender treat with cinnamon, smooth cream cheese and cold herbaceous chamomile ice cream.
