Christmas Eve 24 Dec, 6pm to 10.30pm | 4-Course Dinner | $58++ per person View Menu Dine on your choice of four delicious courses that marry Executive Chef Armando’s sophisticated culinary approach with traditional Christmas food symbols of Europe. Fish and seafood are not commonly recognised as a celebratory Christmas dish, but are important dishes in many parts of Europe such as the southern part of Italy, Spain, the Czech Republic and Sweden. So, this festive season, Tablesape offers delicious starter options of Eel or Halibut. The Eel dish is particularly significant for chef Armando: a traditional festive favourite in Italy, this is also a dish his grandfather used to personally prepare for the dinner table every Christmas. Placing this on the menu is chef Armando’s way of sharing a piece of his favourite Christmas memories; it’s served in the time-honoured “in carpione” style where fish is first cooked, then marinated, and served cold.  There is also a whole fish available for the main course – Oven Baked Line Caught Fish. Caught from the wild waters of Indonesia, the fish is seasoned simply with herbs and salt, then baked in the Josper oven, then served with roast potatoes and grilled vegetables.  Meat lovers can rest assured that the usual Christmas favourites are available. Indulge by starting the meal with Parmigiano, where the cheese is showcased as a savoury flan made even more aromatic with summer black truffle; or choose to start with Beef which highlights the fresh succulence of Beef Tenderloin as a tartar, served with topinambur or Jerusalem artichoke and burrata. Then sate yourself with grilled Prime Ribs with Garlic and Rosemary; or a traditional Roasted Turkey; or better yet, an indulgent Braised Pork Belly. The meal ends with Tablescape’s famous dessert trolley: the always loved Log Cake – here made with chocolate mousse, raspberry cremeux and feuilletine chocolate; traditional brandied Fruit Cake, the richness balanced here with the flavours of winter spice; a tall swirly Mont Blanc of rum almond sponge and chestnut vermicelli that recalls snowy mountain peaks; and an Apple Cake enriched with cream cheese and butter cinnamon crumble.   Christmas Day Lunch25 Dec, 12pm to 2.30pm | Family styled buffet sharing menu | $68++ per person View Menu Spend the daylight hours of these special days bonding with your family over a glorious spread of festive fare at Tablescape, served buffet-style. Chef Armando specially designed the meals as comfort fare, inspired by the golden memories of his own family meals where tables groaned with an abundance of food and drink and family gathered around with cheer and laughter. The live station might be the most eye-catching; a chef is there, ready to pan-sear foie gras upon request. Feel free to dine on each seared chunk ‘naked’ or with your choice of pistachios, balsamic gastrique, a compote made with Williams pears, or slices of buttery housemade brioche. Some individuals might be satisfied with foie gras alone but others need a little more variety; for them, the self-serve spread will be a delight – an assortment of carefully selected charcuterie; braised Spanish octopus with tomatoes and capers; tomatoes with mozzarella and pesto; seared tuna loin with mango salsa; and pasta with lamb ragout.   Once your appetite is properly prepped, then it’s time to make a beeline for the jewels of the lunch spread: the carving stations. New Year's Eve Dinner31 Dec, 6pm to 10.30pm | 5-Course Dinner | $88++ per person View Menu Cross into the new year with the sweet umami of the sea lingering on your palate – perfect for that celebratory flute of champagne. Tablescape offers an evening of seafood indulgence in tribute to the primordial sea of our beginnings. The meal begins with Oyster – a silky oceanic mouthful from Australia complemented with icy fruitiness of granita made from burnt tomatoes and tangy salty bursts of flavours from capers; and moves quickly to Prawns, where the sweetness of raw red prawns from Sicily are underscored by broad beans and the mild milkiness of burrata. The meal continues to build to a crescendo with Tagliolini Al Nero, a long thin pasta often mistaken for tagliolini – made from scratch by the kitchen team so that the earthy, briny complexity of squid ink can be fully worked into the dough. Enriched with pumpkin blended so smoothly that it looks like cream and an exquisite squid tartare, this is a dish that will colour your evening in more ways than one. Crest the wave with Cod, where the tender elegance of Atlantic Black Cod is accompanied with housemade purple potato chips, and a delicately creamy sauce of parsley root, chlorophyll and truffle as both complement and contrast. If your celebration of the Yuletide starts early, Tablescape is happy to join in the party. From 28 November to 3 January, Tablescape offers a festive four-course version of our rotating set lunch – eloquent with flavour and Christmas associations. Consider the choice of the Duck starter and the Risotto main course. Both deliberately offer an element with aromatic smokiness: the smoked duck breast in the starter and the smoked beetroot in the risotto. They were inspired by the idea of a crackling Christmas fireplace where only the most fragrant wood is burnt; though Singapore might be a little too warm for a fireplace, the scent association and feeling of comfort can be brought to life on the palate. The emblematic flavour of winter apples are most noticeably as a texture- and scent-rich Apple dessert option. Crispy tart shell contrasts with apple cooked into a tender treat with cinnamon, smooth cream cheese and cold herbaceous chamomile ice cream.
